Leek and Goat Cheese Tart
For this tart, only ¼ of the puff pastry recipe is required. It is, however, very difficult to make good pastry in quantities smaller than 1 pound of flour and 1 pound of butter. Puff pastry freezes very successfully. It should be wrapped very well, and defrosted slowly in the refrigerator for 24 hours. If not to be frozen, it should be used within a day or two at the most.
Serves 6
FOR THE PUFF PASTRY:
1 pound all-purpose flour
1 ½ teaspoons salt
1 cup plus 2 tablespoons ice water
1 ¼ pounds unsalted butter
